Cranberry Almond Coffee Cake

  • cranberry sauce

    Combine flour , baking soda , baking powder , and salt .
    flour: 2 c, baking soda: 1 tsp, baking powder: 1 tsp, salt: 1/2 tsp

    Set aside.

    Cream butter and sugar .
    butter: 1/2 c, sugar: 1 c

    Add eggs to creamed mixture.

    Mix.

    Add dry ingredients to creamed mixture alternately with plain yogurt or sour cream .

    Mix in almond extract or almond extract & vanilla extract .
    almond extract: 1 tsp, almond extract: 3/4 tsp, vanilla extract: 1/4 tsp

    Spread half of batter in a greased and floured 9 x 13” cake pan .

    Spread the cranberry sauce over batter.

    Spread remaining batter over sauce.

    Top with almonds (slivered or sliced) .

    Bake at 350 degrees for ⏱️ 30-45 minutes .

    Drizzle with icing while cake is still warm.

    Icing: (I used less than a full recipe)

    Mix powdered sugar , warm water , and almond extract .
    powdered sugar: 1/2 c, warm water: 1 T, almond extract: 1/8 tsp

    Add more water if needed.
